This particular variation of the traditional favorite thin pancakes introduces a ricotta spread and an apple-cinnamon garnish, creating a wonderful combination of salty and sweet flavors.

Apple and Ricotta Filled Crepes

Serving: Makes 12 crepes (2-3 crepes per person)

Ingredients for Crepes:

  • 1 cup of flour
  • 1 tablespoon of sugar
  • 1/2 teaspoon of salt
  • 1 cup of whole milk
  • 2 eggs
  • 1 teaspoon of vanilla
  • Cooking butter

Ingredients for Apple Topping:

  • Cooking butter
  • 2 tablespoons of brown sugar
  • Envy Apples, either sliced or diced
  • 1/2 teaspoon of cinnamon
  • 1/8 teaspoon of nutmeg
  • Salt for seasoning
  • Maple syrup

Ingredients for Ricotta Filling:

  • 1 cup of Ricotta cheese
  • 1 lemon (zest and juice only)
  • 2-3 tablespoons of sugar (to your liking)

Preparation of Crepes: Mix flour, sugar, and salt in a bowl. Add milk, eggs and vanilla and use a whisk to combine them all until the mixture is silkily smooth. Put the mixture in the refrigerator.

Preparation of Apple Topping: Warm up the butter and brown sugar in a pan over medium heat until they start bubbling and turn golden brown. Add apples, cinnamon, nutmeg and salt and cook at medium-low heat until the apples are tender. Turn off the heat and add maple syrup.

Preparation of Ricotta Filling: Mix Ricotta, lemon zest, lemon juice and sugar until well combined and set it aside.

Cooking Crepes: Melt a small amount of butter in a non-stick pan over medium-low heat. Pour one ladle of crepe batter into the pan and cook it until bubbles appear; flip it and cook until it’s golden brown. Repeat this step with the remaining batter. Stack the crepes to keep them warm and soft.

Spread the ricotta mixture thinly onto each crepe and fold them into quarters. Top each crepe with apple filling and it’s ready to serve.
