In her book "Pizza! Pizza! Pizza!", the author Sara Haas introduces two pizza recipes that are easy to prepare and enjoy in the comfort of your home.

Roasted Tomato Margarita Pizza Recipe

This recipe produces a 10-inch pizza.

Ingredients Needed:

  1. 1 pint cherry tomatoes, washed and dried
  2. 3 tablespoons extra-virgin olive oil
  3. 2 garlic cloves
  4. A ¼ teaspoon of kosher salt and black pepper (divided)
  5. Pizza dough of your choice, brought to room temperature
  6. 4 ounces fresh mozzarella, sliced
  7. A cup of fresh basil, torn

Cooking Instructions:

Start by placing the pizza stone on the lowest rack in the oven or, if using steel, on the highest rack. The oven needs to preheat at 500°F for a minimum of 45 minutes to 1 hour prior to baking.

Mix the tomatoes, olive oil, garlic, salt, and ⅛ teaspoon black pepper and spread this mixture on a foil-lined baking sheet, which should be placed on the top oven rack. Bake the tomatoes while the oven is preheating until they are blistered and juicy, which should take about 15–20 minutes.

On a pizza peel or parchment, dust some fine cornmeal and all-purpose flour. Stretch out the dough into a circular shape before transferring it to the prepared peel or parchment. Add the roasted tomatoes on top of the dough followed by slices of mozzarella. Sprinkle the remaining ⅛ teaspoon black pepper on top.

Bake the pizza until the cheese has melted and the crust has turned golden, typically around 8–10 minutes.

After removing the pizza from the oven, move it onto a cutting board, garnish it with basil then cut into slices. It is best served fresh.

BBQ Kale Pizza Recipe

This recipe also makes a 10-inch pizza.

Ingredients Needed:

  1. Pizza dough of your choice, brought to room temperature
  2. 2 tablespoons Easy BBQ Sauce (recipe included below) or any store-bought BBQ Sauce
  3. 2 cups stemmed, shredded kale, preferably dinosaur or lacinato variety
  4. ¼ cup thinly sliced red onion
  5. A total of 4 ounces of low-moisture part-skim shredded mozzarella cheese and shredded sharp cheddar cheese
  6. ½ green apple, sliced into thin sticks, julienned
  7. 1 teaspoon crushed red pepper
  8. Hot sauce, for serving

Cooking Instructions:

Like with the previous recipe, preheat the oven to 500°F after placing the pizza stone on the lowest rack or, if using steel, on the highest rack. The oven should preheat at least 45 minutes to 1 hour before baking.

On a pizza peel or parchment, dust some fine cornmeal and all-purpose flour. Stretch out the dough into a circular shape before transferring it to the prepared peel or parchment. Next, distribute the BBQ sauce on the dough leaving a 1-inch border around the edge. Layer kale and onion on top of this. Sprinkle mozzarella and cheddar cheese on top.

Bake the pizza for 8–10 minutes or until the cheese is melted and the crust is golden.

Once you’ve taken the pizza out from the oven, move it to a cutting board. Add apple and crushed red pepper as your garnish, cut into slices and it’s ready to eat. Hot sauce is optional and can be served on the side.

Bonus Recipe: Easy BBQ Sauce

Ingredients Needed:

  1. ½ cup ketchup
  2. ¼ cup water
  3. 2 tablespoons yellow mustard
  4. ⅓ cup apple juice or apple cider
  5. 1 tablespoon molasses
  6. 1 tablespoon Worcestershire sauce
  7. 2 tablespoons brown sugar, packed
  8. 1 tablespoon honey
  9. 1 teaspoon smoked paprika, garlic powder, and onion powder
  10. ¼ teaspoon crushed red pepper
  11. 1 tablespoon apple cider vinegar

Cooking Instructions:

All ingredients except for the apple cider vinegar should be combined in a small pot. Heat the mixture on low until it thickens, stirring often for about 25–30 minutes. Remove the mixture from the heat and mix in the apple cider vinegar.

For a less sweet sauce, you can reduce the amount of brown sugar.
