Roasted Tomato Margarita Pizza
Yields: One 10-inch pizza
Ingredients
- 1 pint cherry tomatoes, washed and dried
- 3 tablespoons extra-virgin olive oil
- 2 cloves garlic
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper, divided
- 1 ball of pizza dough at room temperature
- 4 ounces fresh mozzarella, sliced
- 1 cup fresh basil, torn
Preparation Steps

Position a pizza stone on the lowest oven rack. If using a steel surface, place it on the highest rack. Preheat your oven to 500°F for at least 45 minutes to 1 hour before you begin baking.

In a bowl, combine the cherry tomatoes, olive oil, garlic, salt, and half of the black pepper. Arrange the tomatoes on a foil-lined baking sheet. Pre-cook on the top rack as the oven warms up, until the tomatoes blister and become juicy, roughly 15–20 minutes. Remember to keep an eye on them.

Dust a pizza peel or parchment paper with a sprinkle of cornmeal and all-purpose flour. Stretch and shape your dough into a circle and place it on the prepared surface. Distribute the roasted tomatoes over the dough, followed by the mozzarella slices. Add the remaining black pepper on top.

Bake the pizza until the cheese is melted and the crust is golden, about 8–10 minutes.
- Transfer the pizza to a cutting board, scatter with basil leaves, cut into slices, and serve promptly.
BBQ Kale Pizza
Yields: One 10-inch pizza
Ingredients
- 1 ball of pizza dough at room temperature
- 2 tablespoons BBQ Sauce (recipe follows) or ready-made BBQ Sauce
- 2 cups shredded kale, preferably dinosaur or lacinato variety
- ¼ cup thinly sliced red onion
- ½ cup (2 ounces) shredded low-moisture part-skim mozzarella cheese
- ½ cup (2 ounces) shredded sharp cheddar cheese
- ½ green apple, julienned
- 1 teaspoon crushed red pepper
- Hot sauce, for serving

- Once baked, transfer the pizza to a cutting board. Decorate with green apple slices and crushed red pepper, slice, and serve hot with a side of hot sauce.
Easy BBQ Sauce Recipe
Makes: About ½ cup
Ingredients
- ½ cup ketchup
- ¼ cup water
- 2 tablespoons yellow mustard
- ⅓ cup apple juice or apple cider
- 1 tablespoon molasses
- 1 tablespoon Worcestershire sauce
- 2 tablespoons packed brown sugar
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ⅛ teaspoon crushed red pepper
- 1 tablespoon apple cider vinegar
Preparation Steps

Combine all ingredients except apple cider vinegar in a saucepan. Simmer over medium heat, adjusting to low, and stir frequently for 25–30 minutes until it thickens.
- Remove from heat and mix in apple cider vinegar.
Note: For a less sweet sauce, reduce the brown sugar. The sauce can be refrigerated for up to five days.
