Monster Eyes Deviled Eggs

Halloween is creeping up on us and party plans are starting to brew! Why not add a spooky flair to your menu with these delightful Monster Eyeballs? This tasty, healthy, and straightforward snack makes for an excellent Halloween side dish that your guests will absolutely love both for its appearance and taste.

Ingredients:

  • 1 dozen hardboiled eggs
  • 2 ripe avocados
  • Salt
  • Pepper
  • Green and red food coloring
  • 1 tablespoon vinegar
  • 1 cup hot water
  • Hot sauce (optional)
  • 1 can black olives

Directions:

  1. Combine hot water, 10-12 drops of green food coloring, and vinegar in a mixing bowl.
  2. Gently crack the hardboiled eggs by rolling them on the counter.
  3. Immerse the cracked eggs in the green food-colored water for about 3-4 minutes.
  4. Carefully remove the eggs from the water and let them dry in the egg carton or on paper towels.
  5. Once dry, peel the eggs and slice them in half.
  6. Discard the egg yolks from the halves.
  7. Using a toothpick, draw red wavy lines on the cut side of each egg half to create a bloodshot appearance.
  8. Cut the avocados in half, discard the pits, and scoop the insides into a medium mixing bowl.
  9. Add a pinch of salt and pepper to the avocado and mix thoroughly.
  10. If you like a bit of spice, add a few drops of hot sauce (optional).
  11. Use a spoon to fill the egg halves with the avocado mixture.
  12. Top each egg with a black olive.

Serve and enjoy your spooky creation!
