Recipe: Solar Vegetarian Chili

Try this solar vegetarian chili recipe from Citizens for Solar, an all-volunteer 501(c)(3) nonprofit based in Tucson. Citizens for Solar’s goal is to encourage the use of solar power through education and solar cooking. Their Annual Solar Potluck event is the longest continuously running annual solar event in the world! Bruce Joseph, member of Citizens for Solar, recommends using an American Sun Oven or other box cooker for this recipe.

INGREDIENTS:

2 Tbsp vegetable oil

1 cup onion, diced

1 cup bell pepper (red or green) diced

1 jalapeño or serrano pepper, diced (optional)

2 cloves garlic, minced

1 16 oz. can black beans, rinsed and drained

1 16 oz. can red kidney beans, rinsed and drained

1 16 oz. can diced tomatoes, rinsed and drained

1 6 oz. can tomato paste

1 cup water

1/2 tsp cumin

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional)

1/2 tsp black pepper

DIRECTIONS:

1. Set up solar box cooker and heat oil in a covered 2-quart black speckleware pot.

2. When oil is hot, add onion, bell pepper and hot peppers, if desired, and allow to cook for 5-10 minutes.

3. Add garlic and cook 1-2 minutes.

4. Add remaining ingredients and stir to blend tomato paste and water.

5. Heat until vegetables and beans are cooked through, about 1/2 hour to 1 hour.
