Refreshing Watermelon Salad with Feta and Mint

Ingredients:
- 1/4 cup lemon vinaigrette
- 4 cups cubed watermelon
- 1/2 English cucumber, sliced into 1/4-inch thick half moons
- 1/2 small red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh mint, roughly chopped
Instructions:
- Pour the vinaigrette at the bottom of a large canning jar.
- Layer the jar with watermelon, cucumber, red onion, feta, and mint.
- Secure the lid tightly and shake well to mix.
- Refrigerate until you’re ready to serve.
Alternative Option: You can substitute the lemon vinaigrette with Greek dressing.

Delicious Watermelon Ice Pops

Ingredients:
- 1 watermelon
- Fresh fruit pieces (such as grapes, strawberries, or kiwi)
Instructions:
- Puree the watermelon and pour it into ice pop molds.
- Add chunks of fresh fruit to each mold.
- Insert the caps and place in the freezer.
- Enjoy once frozen.
