Refreshing Watermelon Salad with Feta and Mint

Ingredients:

  • 1/4 cup lemon vinaigrette
  • 4 cups cubed watermelon
  • 1/2 English cucumber, sliced into 1/4-inch thick half moons
  • 1/2 small red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh mint, roughly chopped

Instructions:

  1. Pour the vinaigrette at the bottom of a large canning jar.
  2. Layer the jar with watermelon, cucumber, red onion, feta, and mint.
  3. Secure the lid tightly and shake well to mix.
  4. Refrigerate until you’re ready to serve.

Alternative Option: You can substitute the lemon vinaigrette with Greek dressing.

Delicious Watermelon Ice Pops

Ingredients:

  • 1 watermelon
  • Fresh fruit pieces (such as grapes, strawberries, or kiwi)

Instructions:

  1. Puree the watermelon and pour it into ice pop molds.
  2. Add chunks of fresh fruit to each mold.
  3. Insert the caps and place in the freezer.
  4. Enjoy once frozen.
