Loaded Veggie Nachos

Growing up, I adored nachos in all forms. However, becoming a vegetarian made our nacho nights rather boring, often relying on just cheese and chips. I collected recipes over time, which led me to experiment. After merging elements from two different nacho recipes, I created my very own version of loaded veggie nachos.

Ingredients:

  • 1 bag of tortilla chips
  • 2 tbsp extra virgin olive oil (EVOO)
  • 1 finely chopped onion
  • 2 cloves garlic, finely chopped
  • 1 can (15 ounces) rinsed cannellini beans (white kidney beans; black beans can substitute)
  • Steamed broccoli (quantities as desired)
  • 2 tbsp minced jalapeños
  • 2 cups shredded cheese (any type; we used Mexican blend)
  • 1 cup diced tomatoes
  • 1/3 cup sliced black olives
  • Sour cream (optional)
  • Salsa (optional)

Instructions:

1. In a large skillet, heat the EVOO over medium-high heat. Add the chopped onion and garlic, cooking until lightly browned (about 4 minutes).

2. Add the broccoli and 1/3 cup of water, stirring until the water evaporates and the broccoli is tender (about 4 minutes).

3. Stir in the rinsed beans and minced jalapeños, cooking until heated through (1-2 minutes). Season with salt and pepper to taste.

4. Preheat your oven to 375°F. On a greased cookie sheet, layer the tortilla chips without leaving spaces between them. Pour the vegetable mixture over the chips, then sprinkle with cheese.

5. Bake on the top rack of the preheated oven until the cheese is melted (about 1-2 minutes). If you prefer crunchier chips, switch to broil and watch carefully until golden brown.

6. Remove from the oven, then top with diced tomatoes and sliced olives before serving. Feel free to add sour cream or salsa as desired. Guacamole would make a tasty addition too!
