Serves: 6-8
Ingredients:
- 4 cups beef stock
- 1 can (14 ounces) diced tomatoes
- 16 ounces pre-cooked frozen meatballs
- 19 ounces tortellini
- 6 ounces frozen spinach
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon Italian herbs
- 3/4 cup grated Parmesan cheese, divided, with extra for serving
- Salt, as needed
- Black pepper, as needed
- 1/4 cup heavy cream
- Bread, to accompany
Instructions:

In a large pot, combine the beef stock and diced tomatoes. Fill the empty can from the diced tomatoes with water and pour it into the pot as well.

Add in the meatballs, tortellini, and frozen spinach. Stir the mixture over medium heat.

Mix in the onion powder, garlic powder, Italian herbs, and 3/4 cup of the Parmesan cheese. Season with salt and black pepper to taste.

Let the mixture cook for 25 minutes, stirring now and then.

Pour in the heavy cream and let it cook for an additional 5 minutes.
- Serve the dish warm alongside bread and sprinkle extra Parmesan cheese on top if desired.
