Green Velvet Cupcakes with Baileys Cream Cheese Frosting

Yield: 12 Cupcakes
Ingredients
Cupcakes:
- 1 1/4 cup Flour
- 1 cup Sugar
- 1 tbsp Cocoa Powder
- 1/4 tsp Salt
- 1/2 tsp Baking Soda
- 1 Egg
- 1/2 cup Oil
- 1/2 cup Milk
- 1 tsp Vinegar
- 1/2 tsp Vanilla
- Green Food Coloring
Frosting:
- 8 oz softened Cream Cheese
- 4 tbsp softened Butter
- 3 cups Powdered Sugar
- 3 tbsp Baileys
Instructions
- Preheat the oven to 350°F (175°C).
- Line a muffin pan with paper liners.
- In a bowl, beat the egg and then whisk in all the wet ingredients until well blended.
- In a separate bowl, sift together all the dry ingredients.
- Combine the wet and dry ingredients, mixing until just blended.
- Add food coloring to achieve the desired shade of green.
- Fill cupcake liners about two-thirds full.
- Bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool on a wire rack.
- In a mixing bowl, cream together the cream cheese, butter, and Baileys until smooth.
- Gradually add the powdered sugar, beating until you reach your desired consistency.
- Transfer the frosting to a zippered bag or piping bag, and pipe onto the cooled cupcakes.
