- 1/2 teaspoon salt
- 1 cup whole milk
- 2 eggs
- 1 teaspoon vanilla
- Butter, for cooking
Apple Topping:
- Butter
- 2 tablespoons brown sugar

- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- Salt, to taste

Ricotta Filling:
- 1 cup ricotta cheese
- 1 lemon, zest and juice only
- 2-3 tablespoons sugar, or to taste
To prepare the crepes: In a bowl, mix together the flour, sugar, and salt. Add the milk, eggs, and vanilla, then whisk until the mixture is smooth and silky. Refrigerate the batter.
To prepare the apple topping: In a pan over medium heat, melt the butter and brown sugar until they are bubbly and golden. Add the apples, cinnamon, nutmeg, and salt to taste, and cook over medium-low heat until the apples are soft. Turn off the heat and drizzle with maple syrup.
To prepare the ricotta filling: Mix the ricotta cheese, lemon zest, lemon juice, and sugar until well combined, then set aside.
In a nonstick pan over medium-low heat, melt a small amount of butter. Pour in one ladleful of crepe batter, cook until bubbles form, then flip and cook until golden brown. Repeat with the remaining batter, stacking the crepes to keep them warm and soft.
Thinly spread the ricotta mixture onto the crepes and fold them into quarters. Top with the apple mixture and serve.
