This twist on the classic thin pancakes includes a ricotta spread and an apple-cinnamon topping, offering a delightful combination of savory and sweet flavors.

Apple Ricotta Crepes

Makes 12 crepes (2-3 crepes per person)

Crepes:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Butter, for cooking

Apple Topping:

  • Butter
  • 2 tablespoons brown sugar
  • Envy Apples, sliced or diced
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • Salt, to taste
  • Maple syrup

Ricotta Filling:

  • 1 cup ricotta cheese
  • Zest and juice of 1 lemon
  • 2-3 tablespoons sugar, to taste

To prepare the crepes: Mix the flour, sugar, and salt in a bowl. Add milk, eggs, and vanilla, and whisk until completely smooth. Chill in the refrigerator.

To prepare the apple topping: In a pan over medium heat, melt butter and brown sugar until bubbly and golden brown. Add apples, cinnamon, nutmeg, and salt according to taste; cook on medium-low heat until apples are tender. Turn off the heat and finish with a drizzle of maple syrup.

To prepare the ricotta filling: Mix the ricotta, lemon zest, lemon juice, and sugar in a bowl until well blended. Set aside.

In a nonstick pan over medium-low heat, melt a little butter. Pour in a ladle of crepe batter, cook until bubbles appear, then flip and cook until lightly golden. Continue with the rest of the batter, stacking crepes to keep them warm and soft.

Spread the ricotta mixture thinly over the crepes and fold them into quarters. Top with the apple mixture and enjoy.
