Ingredients:

  • 4 cups beef broth
  • 1 can (14 ounces) diced tomatoes
  • 16 ounces frozen meatballs
  • 19 ounces tortellini
  • 6 ounces frozen spinach
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 3/4 cup Parmesan cheese, plus extra for serving, divided
  • salt, to taste
  • pepper, to taste
  • 1/4 cup heavy cream
  • bread, for serving

Instructions:
In a Dutch oven, pour in the beef broth and diced tomatoes. Rinse the empty diced tomatoes can with water and add that to the pot as well. Incorporate the meatballs, tortellini, and spinach into the mixture. Cook over medium heat and then mix in the onion powder, garlic powder, Italian seasoning, and 3/4 cup of Parmesan cheese. Season with salt and pepper to your preference.

Let it cook for 25 minutes, stirring occasionally. After that, add the heavy cream and allow it to cook for an additional 5 minutes.

Serve with bread and additional Parmesan cheese.
