Recipe from “Cookin’ Savvy”
Servings: 12
Butter
36 defrosted tater tots
10 eggs
1/2 cup of heavy cream or half-and-half
1/2 cup of grated cheese
2 teaspoons of garlic powder
2 teaspoons of onion powder
1 package (2 1/2 ounces) of real bacon bits
Salt and pepper, to preference
Preheat the oven to 350°F.
Coat a muffin tin with butter. Place three tater tots into each muffin slot and press them down.
In a mixing bowl, combine the eggs, cream, cheese, garlic powder, onion powder, and bacon. Season with salt and pepper according to your taste. Pour the mixture to fill each muffin cup to the top.
Put a baking sheet under the muffin tin to catch any drips, and bake for 20-25 minutes.
Note: These can be prepared in advance and simply warmed up in the microwave for a quick meal on the go.
