Recipe for Egg Tots

Makes 12 servings

Ingredients:

  • Butter
  • 36 thawed tater tots
  • 10 eggs
  • 1/2 cup heavy whipping cream or half-and-half
  • 1/2 cup shredded cheese
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 package (2 1/2 ounces) real bacon pieces
  • Salt, to taste
  • Pepper, to taste

Instructions:

  1. Preheat the oven to 350 F.
  2. Coat a muffin tin with butter. Place three tater tots in each muffin spot and press them down.
  3. In a bowl, whisk together the eggs, cream, cheese, garlic powder, onion powder, and bacon pieces. Add salt and pepper as desired.
  4. Pour the mixture into each muffin space, filling them all the way.
  5. Place a cookie sheet under the muffin tin to catch any spills and then bake for 20-25 minutes.

Tip: Prepare these ahead of time for an easy microwave reheat and enjoy them on the go.
