Ingredients:

  • 2 Carrots
  • 2 Celery Stalks
  • 3 Tablespoons of Butter
  • 2 Cups of Cooked, Chopped Chicken
  • 1/3 Cup of Lemon Juice
  • 2 Teaspoons of Lemon Pepper
  • 6 Cups of Broth
  • 1 Cup of Orzo
  • 1 Tablespoon of Garlic Powder
  • 1 Tablespoon of Onion Powder
  • 1 Tablespoon of Thyme
  • 1 Tablespoon of Sugar
  • 1 Cup of Heavy Cream
  • Salt to Taste
  • Pepper to Taste
  • Cucumber Sandwiches for Serving

Follow these steps: Dice the carrots and celery and sweat them off in a pot with the butter.

Mix the chicken with the lemon juice and lemon pepper in a separate bowl and keep it aside for now.

Once the carrots and celery have softened, pour the broth and orzo into the pot. Stir in the garlic powder, onion powder, thyme and sugar. Allow it to simmer for 10 minutes before adding the chicken and cream. Let it simmer for a further 5 minutes.

Taste the soup and season it with salt and pepper according to your liking. Serve this flavorful soup with cucumber sandwiches on the side.
