Refreshing Watermelon, Feta, and Mint Salad

- Lemon vinaigrette dressing, 1/4 cup
- Watermelon, cubed, 4 cups
- English cucumber, chopped into 1/4-inch half moons, 1/2
- Small red onion, thinly sliced, 1/2
- Feta cheese, crumbled, 1/4 cup
- Fresh mint, roughly chopped, 2 tablespoons
Pour the vinaigrette into a large mason jar. Layer the watermelon, cucumber, red onion, crumbled feta, and chopped mint. Secure the lid tightly and shake until everything is adequately mixed. Store in the fridge until it’s time to enjoy.
Note: Greek dressing can be used as an alternative to the lemon vinaigrette.

Sweet and Chilled Watermelon Ice Pops

- One whole watermelon
- Assorted fresh fruit pieces (such as grapes, strawberries, or kiwi)
Blend the watermelon until it is a smooth puree and pour it into ice pop molds. Add your chosen fresh fruit pieces, secure the lids, and chill them in the freezer. Make sure to wait until they’re fully frozen before serving.
