Refreshing Watermelon Salad with Feta and Mint

- 1/4 cup lemon vinaigrette
- 4 cups watermelon, cubed
- 1/2 English cucumber, sliced into 1/4-inch half moons
- 1/2 small red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh mint, roughly chopped
In a large canning jar, drizzle the lemon vinaigrette at the bottom. Add layers starting with watermelon, followed by cucumber, red onion, feta cheese, and mint. Tightly seal the jar with a lid and shake to blend the ingredients. Keep stored in the refrigerator until you’re ready to enjoy.
Alternative: Replace the lemon vinaigrette with Greek dressing.

Homemade Watermelon Ice Pops

- Fresh fruit pieces (options include grapes, strawberries, or kiwi)
Blend the watermelon into a puree and pour it into ice pop molds. Add chunks of fresh fruit to the molds, insert the caps, and freeze. Serve once thoroughly frozen.
