Dry Brining Mix
- Half a cup of salt
- One cup of sugar
- One cup of brown sugar
- Two tablespoons of lemon thyme or lemon zest
- Three tablespoons of garlic powder
- One tablespoon of pepper
- One salmon fillet (weighing 2-3 pounds)
Tasty Glaze
- Quarter cup of brown sugar
- Quarter cup of ketchup
- Quarter cup of mustard
- Quarter cup of apple cider vinegar
- One tablespoon of Worcestershire sauce
- One tablespoon of minced garlic
- Two tablespoons of ginger
- Salt and pepper as per your preference
For dry brining, stir up all dry brining ingredients in a bowl. Put the salmon on a baking sheet and cover it in the dry brine mixture. Leave the salmon in the refrigerator for at least 10-12 hours or ideally overnight.
After the brining process, thoroughly rinse the salmon. Dry it using a paper towel and leave it to rest for an hour.
Preheat your grill to a medium heat level.
Meanwhile, prepare the glaze. Combine the brown sugar, ketchup, mustard, apple cider vinegar, Worcestershire sauce, garlic and ginger in a bowl. Season the mixture with salt and pepper as per your taste. Brush this glaze onto your salmon.
Now, it’s time to grill the salmon. Put your baking sheet with the glazed salmon on the grill and cook for 15-20 minutes. You know it’s done when the internal temperature reaches 130 F. Let the salmon rest for about 5 minutes before serving it.
