Refreshing Watermelon Salad with Feta and Mint

- 1/4 cup lemon vinaigrette
- 4 cups cubed watermelon
- 1/2 English cucumber, sliced into 1/4-inch half moons
- 1/2 small red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh mint, roughly chopped
Begin by drizzling the vinaigrette into the bottom of a large canning jar. Next, layer the watermelon, cucumber, red onion, feta, and mint. Seal the jar tightly with the lid and shake gently to mix the ingredients. Refrigerate until you are ready to serve.
Substitution: You can use Greek dressing instead of lemon vinaigrette.

Delightful Watermelon Ice Pops

- 1 watermelon
- Chunks of fresh fruit (such as grapes, strawberries, or kiwi)
Start by pureeing the watermelon, then pour the puree into ice pop molds. Add chunks of fresh fruit into the molds, insert the caps, and place them in the freezer. Enjoy once frozen.
